Jean-Michel Giboulot produces exceptionally fine wines, which also represent excellent value.
Indeed, for us, Savigny les Beaune has always been to Burgundy, what St. Joseph is to the northern Rhone, an often overlooked appellation, which is able to produce great wines at relatively reasonable prices.
The domaine comprises 12 hectares divided between several parcels within the single appellation of Savigny Les Beaune. The vineyards are all grown and managed organically, the vinification is traditional with little intervention from the winemaker, using stainless steel and wood, and controlled temperatures.
The terroir here gives the wines a wonderful finesse and similar mineral profile to the wines of Chablis. The whites have stunning minerality on the palate and layers of ripe, pure, steely fruit. Serious structure and perfect balance of racy acidity. Superb delineation and puissance.
Giboulot’s wines straddle the line between traditional and modern, with reds that have crunchier fruit and fine tannins, but plenty of ripeness and purity. Aux Grands Liards, is a vineyard nestled right in the heart of the Savigny-lès-Beaune appellation, just below a band of Premier Cru sites such as Aux Serpentières, Aux Gravains, and Les Lavières. This vineyard’s unique soil has the famous Burgundian limestone, but also a ferrous clay, which lends a nice depth and dark brooding quality to the fruit produced here.
