Pascal and Beatrice Lambert own this 14 ha domaine, which is situated in the Coteaux Cravant, home to several other significant estates in the Chinon appellation. Founded in 1987, the Lambert’s began to convert to organic viticulture in 1995 and have been certified as biodynamic since 2012, being part of the Renaissance des Appellations. Pascal and Beatrice believe, that to craft the finest Chinon, one must begin by respecting the soil and the vine.
The Coteaux Cravant, is widely regarded as having some of the finest terroir of the appellation. With gravelly, alluvial soils, helping to impart richness, and chalky, calcareous clay, which adds finesse and typicity.
In the early 2000s, the Lamberts began farming their vineyards biodynamically, closely following the lunar cycle from vineyard to cellar. Their overall goal, is to display the purity and idiosyncrasies of their varied terroir. They only use indigenous yeasts, with fermentation and elevage in concrete or wooden vats, (the aging is adapted to suit the different cuvées and terroirs), followed by racking and bottling according to the lunar cycle.
There is very little manipulation during vinification and sulphur is kept to a minimum here, resulting in some of the most beautifully expressive and pure examples of Chinon, which possess real focus and energy. There is a wonderful richness and vibrance to the wines, in addition to the subtle minerality and complexity, that increases as you make your way through the range.
