So, down in Battersea you may well hear lots of yelping, barking and general doggy noises, however, that isn’t the only sound you might hear, you might just catch the gentle sound of spirit running into a spirit still, or conversely not as that sound will probably be drowned out by music!
Welcome to the Doghouse distillery. Founded by husband and wife team Braden and Katherine Saunders back in September 2016 and it’s all a bit rock ‘n’ roll. For Braden and the team, music and good booze goes hand in hand. As they say “If you are listening to music you tend to have a drink. Conversely, if you are drinking you tend to be listening to music, they are mutually inclusive”
So, the plan for the distillery was to create a space where passion, creation and expression are distilled (pardon the pun) into not just a spirit, but a number of different spirits, because “It’s like saying on a night out “I am only drinking one thing tonight!” BORING!!”
During the gin craze of a few years back, a number of boutique distilleries were built, However, they were not, strictly speaking distilling, rather they were rectifying. The difference between the two is that distillers will make their spirit from scratch, whereas a rectifier will buy in their neutral grain spirit (NGS), because it is very expensive and time consuming to produce a 97% abv spirit, so purchasing it from a commercial grain distiller makes a lot more sense for small scale gin producers.
Braden, however, didn’t want to do things by half, call him bloody minded I suppose, but he wanted to create his spirits from scratch, or to coin a rather in term, be a grain to bottle distiller. In order to create NGS you need a column still and that’s precisely what they had built for them. A 21 metre copper column still has created attached to a traditional copper pot still. This hybrid, if you like gives them the flexibility to use just the pot still for say whisky production, or a combination of the pot and the column still for making vodka.
As I mentioned earlier, music plays a big part in the life of the distillery, and this is very much apparent in their labelling designs. They certainly evoke the idea of album cover artwork or tattoo designs and feedback (no pun intended) into their unique approach to spirits production. So, if you are feeling a little ruff, then I’m sure drop of their Debt Collector Moonshine will get you up and chewing on slippers in no time! (That’s it for the doggy metaphors!)
