Vilmart NV Rosé Champagne ‘Cuvee Rubis’
Tasting Note
During our time in the wine trade, we have not come across many (many being the generous word) Rosé Champagnes that have overly interested us. But in the more than capable hands of Laurent Champs, the Cuvee Rubis and Cuvée Emotion in particular have completely inverted our scepticism. This is expertly crafted, elegant and refined. At 90% Pinot Noir and 10% Chardonnay, the pure and elegant red fruit really shines with this cuvée. The beautiful salmon pink dress is followed by luscious aromas and sensations of strawberries, cherries and raspberries on the nose and palate. There is ample freshness, a salivation-inducing mousse and a smidge of pink grapefruit on the back to add a little fresh twang to the proceedings. The balance is impeccable and the finish is pure and long. 8g/l residual sugar.
