Base Malt: 90% peated
Speciality Malt: 5% Dark Crystal Malt & 5% Brown Malt
Maturation: First Fill Bourbon & Refill Rum

The nose opens with some noticeable high ester rum notes, tropical fruit, pineapple, guava, vanilla and salt. There’s a big chunk of fusel oils, menthol and raw, herbal peat. With time charred oak, char, toast, ashy peat, and sweet vanilla. Shy and retiring it isn’t!
The palate also opens with the rummy fruit, tropical apricot, pineapple and a rich caramel sweetness which could be the combination of the oak and the crystal malt. Hints of biscuits (brown malt?), cereal, raw peat and salt. Masked, intense, ashy, coastal finish with cereal, malt, dark toffee and warm vanilla finish.
Water emphasises the cereal and toasted oak. More peat but less fruit. Still fairly fusel with some lovely juicy citric notes. The palate also shows more cereal and less peat. It’s also maltier, biscuitier, more toffee’d but less salty. The fusel notes are a little more noticeable as well and the finish displays a slight vegetal character, but the rummy sweetness balances those notes in the finish.
