The nose opens with the obvious, slightly medicinal and herbal peat. Fat barley and honey sits beneath. Fruity with apple, pear, citrus and an old skool Coal Ila garden pea-like character. Slightly salty with a touch of iodine, petrol and burnt wood. Lovely balance.
The palate displays a lovely depth of sweet barley and sootier peat smoke. Hints of apple, salt and burnt wood. It fills out well as the honey and oak emerges. Pleasantly juicy with a lightly medicinal, sour fruit, iodine finish and a little bittering from the oak at the end.
Water lessens the peat and emphasises the citrus and barley on both the nose and palate. Quite peppery now with more oak vanillins and salt.
