New American oak, finished for 2 years and 4 months in ex-Solera sherry cask

An earthy, sherry laced nose of treacle and herbal Oloroso mixed with chunky toffee and toasty American oak. Hints of salt, rose petal pot pourri and with time chocolate rye and dark rye spice. There is a lot of oak here, but the rye is just about standing up to it. Late fleshy dried apricot and sultana.
The palate opens with more of the rye and dark spice. The sherry, although noticeable is subtler and the spirit shows rose petal pot pourri youthful notes. Toasty and toffee’d American oak comes through on the middle along with luscious, dried apricot, banana, pineapple, cacao and salty spice. Masked with lingering cacao and rye spice.
Water makes the nose saltier and spicier. It now shows a better balance of oak and spirit. The palate still has a good deal of oak but like the nose the balance is better. Long, spicy, earthy finish.
