A blend of 5 hogsheads of Inchgower, Benrinnes, Auchroisk, Peated Ben Nevis and Caol Ila
From their custom solera of one Fino sherry quarter cask and two Oloroso sherry quarter casks.

The nose is quite cereally and malty with a subtler peat influence than Batch 4. Although the sherry is quite restrained, I’m getting quite a noticeable Fino sherry influence along with a little Oloroso dried fruit, salt, vanilla and a little sweeter peat.

The palate is full of juicy, off-sweet apricot, apple, astringent peat and subtler Oloroso sherry than Batch 4. Dense, cerealy and malty with an almost savoury meatiness and like the nose a noticeable Fino sherry character. Long, lightly estery white fruit, salt and spice in the finish. Herbal peat after-taste. Seeing the evolution of this bottling is fascinating.
