The nose kicks off with the juicy PX dried fruit, citrus, straw and hints of raisin and herbal Oloroso. There’s a slight edginess to the barley and although the bulk of the spirit is matured in sherry, there is some balancing spirit character. With time it becomes quite cereally with a little sweet vanilla.
The palate is more sherry orientated. Moist raisinated fruit cake, walnuts, herbal Oloroso, treacle and nutty Amontillado notes. Less barley and less American oak, but a touch of citrus and spice on the middle. Good length with lingering tannin, menthol, herbal sherry and subtle malty/ meaty notes.

The Jackton Distillery’s Inaugural Release of 6000 bottles comprises 30% First Fill Oloroso Hogshead, 30% First Fill Amontillado Hogshead, 30% First Fill PX Hogshead, 10% Bourbon Barrel – Casks filled between August 2020 and August 2021
