Second Fill Bourbon, finished in First Fill Spanish Oak

Obvious but not overpowering aromas of sherried dried fruit, charred wood, taught barley and hints of slightly dusty American oak. The sherried fruit notes become slightly grainy and mingle well with the subtle saltiness. Well balanced with apricot and barley underpinning. With time a touch of wood smoke appears along with some green fruit and rye-like herbal notes.
Dense and weighty on the palate with the treacly sherry up front with some rye-like herbal notes. Malty on the middle with hints of wood smoke, subtle American oak and building salt, which explodes on the finish, to be joined by barley and citrus. The herbal sherry returns on the after-taste. Lovely progression and building intensity.
