Aromas of youthful cereal and grippy, nutty French oak. Hints of toffee, marzipan and spicy red winey notes appear. Like the first release the spirit feels quite young and a little underdeveloped, however, with time some sweeter corn fat bourbon notes and citrus emerge.
The palate opens with creamy vanilla and the grippy, spicy and nutty French oak. Hints of rose petal spirit, cereal and drying tannin on the middle, but just like on the nose the sweet corn fat bourbon notes balance. Long, cereal, young barley, red wine fruit and grippy spice finish. Although a touch on the young=g side, you have to love the intensity.
Water brings out lemon, white fruit, hazelnut, heather and cream on the nose. It lessens the intensity of the French oak. The palate also displays more citrus and white fruit. It also shows more of the red winey fruit and less French oak. Still nutty and youthful in the finish.

From the forests of Thiron Gardais to the stills of Lindores Abbey, Thiron 25 is the result of a vision, patience and innovation. The Thiron Virgin Oak casks were specially commissioned by the distillery, crafted from oak carefully harvested from the forests nearby to Thiron Abbey, where the monks who founded Lindores hailed from.
