Bourbon barrel/ 6 months finishing in Miguel martin Oloroso Sherry Hogsheads

Tasted: Aug 2023

The nose displays plenty of dark, sherried dried fruit, raisin, treacle, sweet fig and prune. I would assume it was finished in a first fill hoggy. Earthy peat, dry peat smoke, subtle citrus, sweet vanilla and final a little barley appears.

The palate also displays a fair amount of raisinated fruit and treacle. The combination of alcohol, salt and citrus balance the sherry sweetness. Earthy peat and supple tannins on the middle. Slightly masked with an earthy spice finish and subtle, youthful spirit after-taste.

iluted the nose is a little lighter on the sherry and now hints of green apple, apricot and salt can be discerned. The peat has developed a slight astringency. The palate is very much the same as the nose, showing more American oak and spirit character. Sweet/ herbal sherry notes return on the finish.
