Fresh & refill Bourbon and Sherry, plus red & white Wine Casks
Re-tasted: Feb 2017
Aromas of dusty barley and chocolate powder with hints of spicy red fruit and subtle sherried dried fruit. Wonderfully complex with a touch of honey, creamy vanilla, lime and gooseberry. The barley really stands out and becomes quite fragrant with time, which is amazing considering the amount of different casks used.
The palate is fresh and juicy, opening with moist fruitcake and vanilla, which leads into dark chocolate, fragrant barley, creamy vanilla and hints of strawberry and raspberry. A little drying tannin comes through on the middle but the moist sherry balances. Long, mineral and citric finish with lingering treacle, dark honey and raisinated fruit. Lovely dark chocolate after-taste.
