Peated & Unpeated spirit fully matured in ex-Oloroso Hungarian oak Barriques.

Considering it’s been fully sherry matured the youthful rose petal spirit shows first. Quite savoury and very spicy with savoury notes. Ginger cake, sweet oak tannin, dark chocolate coated sun dried raisin, vanilla, dried black fruit, toffee and salt.
The palate opens with the spicy, nutty and toasty oak and subtle youthful rose petal spirit. Very salty with subtle raisinated fruit and spice on the middle along with ginger and dark chocolate. The tannins become quite dry and grippy and the finish is slightly masked with an earthy peat and salty finish.
Water lessens the sherry influence and he oak influence. More barley, apricot and citrus now. The palate shows softer spice notes. Again, less wood and less sherry. More barley, salt, malt and earth. Pleasant macerated fruit and ginger middle and a longer, sweeter, peatier finish with a little sappy oak note. Very intriguing!
