70% Pinnacle MG+ year, pitched with 15% Toro Nero & 15% Pepe Nero yeast
100% Oloroso matured

Aromas of fresh barley, sultana, dried citrus, biscuits, oxidised fruit and hints of Sauvignon Blanc-esque grassy notes. Dense and bold with a touch of botanical spice, cinnamon, macerated apricot, honey and chocolate.

The palate is fresh and citric to start. The honey, beeswax, chocolate and oxidised apricot moves in adding weight. Malt, dried lemon, sultana, spiced biscuits on the middle. Long, biscuity and citric finish with hints of roasted cereal, cereal husks, youthful spirit and charred oak. Given it has been aged fully in sherry it’s amazingly well balanced.

Water brings out pollen heavy floral notes on the nose, along with a touch more oak and honey. The palate is less citric and shows more beeswax and honey. Still long and biscuity.
