Holyrood ‘Ambir’ Single Malt 49.8%
Tasting Note
Specialty malts including 81.7% Scottish Pot Still
Distillers, Brewers and 0.5% Lavigne wine yeast
Aged in 80.7% First Fill Bourbon and 10.3% Oloroso.
Tasted: Feb 2025
Aromas of youthful cereal, sour wine, winey fruit, malt biscuits and a little sweeter barley. The casks add vanilla, toffee and touch of dried fruit. With time some wood smoke and earth. Overall, it comes across like an old fashioned Lowland whisky.
The palate displays cereal, malt and a little youthful, herbal spirit. A little bubblegummy white fruit, sweet barley, apple, apricot, pear and sour red fruit follow. Hints of raisin and sultana on the middle. Masked, cereal, vanilla and beeswax finish.
Diluted the nose is still cereally but now shows less sour fruit and a touch more sherry. Still well balanced though. The palate now shows more American oak. Again, less sour fruit and sherry. Longer, slightly peppery finish.
