Tasting Note

Sherry Butt re-racked into an ex-Islay hogshead in 2020
Cask 300120
Dist: Feb 2015 Btl 2025
Tasted: Nov 2025
Ooh, hello, this is a bit unexpected. The nose starts herbal and juicy with plenty of Oloroso raisin, tar and coffee and then out pops some manure and peat. Given I was tasting this without knowing the casks it had been matured in, I was wondering if my nose was playing tricks on me!

The palate opens with the soft, if slight edgy Oloroso, treacle, tar and damp wood and earth. Even though the finish is a bit masked it explodes with green wood, green peat and herbal bbq sauce.

Water makes the nose less herbal, but more saucy and treacly. The palate is sweeter with more treacle. Less peat but a bit more cereal. Long, woody finish.
