An intense and spicy nose with plenty of dark rye fruit, toasted oak, vanilla, bitter spice, sweet corn, vanilla and subtle violet notes. Apparently the mashbill contains only 12& rye, but the rye is incredibly dominant and the intensity is off the charts!
The palate is intense and spicy with bitter rye, pepper and alcohol! A little corn attempts to soften along with some vanilla and hints of charred oak on the middle. The alcohol definitely ramps up the rye spices. Long, intense, bitter spice finish with dark fruit and dark marzipan notes in the finish. Seriously bitter and toasted tannin after-taste.
Diluted the nose is still spicy but softer and sweeter. Taming the alcohol has allowed corn oil, orange, walnut, fig, nutmeg and pepper to show. The palate is similar with the oak tannins being a little grittier and a touch of rose petal spirit now showing. Still a fairly bitter finish with the rose petal, violets and earthy notes lingering.
