Eden Mill 2003 ‘Art of St Andrews’ Single Malt 46.5%
Tasting Note
Lightly peated spirit aged in ex-Bourbon, Oloroso and Pedro Ximinez. Finished in Grande Champagne Cognac casks.
Tasted: Dec 2023
A wonderfully complex nose which opens with subtle, smoky, astringent coastal peat and brine, followed by cereal, honey, Cognac-esque apple, seaweed, bonfire smoke, barley and citrus. Very subtle sherried dried fruit, shortbread biscuit and spice. Beautifully balanced.
The palate opens with more noticeable creamy Bourbon oak and hints of astringent coastal peat, sweet peat, brine and heather. Hints of honey, Cognac-esque apple come through on the middle with the subtle sherried dried fruit notes creeping in along with toasted spice, shortbread and very subtle treacle and smoke. Long, mouth-watering, mineral and citrus finish with returning astringent peat, seaweed, citrus and chewy toffee. A truly stunning whisky!
