Liv’s Pet Nat is made from 100% Chenin Blanc grapes sourced from 60-year-old vines grown on green and purple slate with volcanic origins. This Pet Nat stands out as it has a high level of pressure, which is quite unusual for this style of wine. Domaine Vincendeau has been practicing organic farming methods right from the start, and transitioned to biodynamic practices in 2019. The fermentation process of Liv’s Pet Nat is spontaneous, with a brief cooling and gentle separation of the grape must from the yeast. The remaining fermentation takes place naturally in the bottle. After six months of aging, the wine is disgorged. In terms of aroma, the Pet Nat de Liv 2022 offers scents of quinces, lemons, and apples, accompanied by a subtle mineral note and delicate carbonic acid. It’s an ideal choice for an uncomplicated aperitif with a refreshing zing. Like all Liv Vincendeau wines, it is bottled unfiltered and with minimal use of sulfur.
