This cuvée holds a special place in Sylvain’s heart, as it was the first vineyard he rented when he started his own venture in 2007. With vines that are 50-60 years old on south-facing terraces.

Made entirely using whole clusters and aged in pièces de Bourgogne, this wine is full-bodied and dense, boasting ample concentration, ripe tannins, and a long, dusty finish. It features attractive and complex aromas of menthol, star anise, and blackberries, with a wiry, herbal streak. On the palate, it showcases a salty grip and a deep, rich dark fruit weight. Aromas of black fruit, peppery spice, and liquorice tantalise the senses. The wine is full-bodied and textured, with present yet fine-grained tannins.

Pair this wine with dishes such as pork terrine, grilled sausages with herbs, or roasted chicken for a delightful culinary experience. For optimal enjoyment, consider cellaring it for a couple of years and drinking it through the end of the decade.
