The nose is very different to the Yellow Circle. It’s smokier and earthier with a greater prominence of almost agave-like pulped white fruit. Hints of coal dust, black pepper and minerals. Again, there is practically no oak, so the spirit and terroir characteristics are very evident. Overall, it feels a little more evolved than Yellow Circle.
The palate feels younger than the nose suggests but shows plenty of that pulped agave-esque fruit and smoke. Hints of apricot, apple, black pepper and soil. Very little oak. Long, slightly herbal/ scrubby finish with lingering citrus and chalky minerals.

From rye grown on the Base of Mount Aiguille, Soil Limestone Scree. Production as per Yellow Circle.
