Tasting Note
Made from 70 year old vines, the Don Quixote is only produced in particularly good vintages and left to mature in bottle for several years before release. Whilst seemingly gaining extra gras and complexity from its time in bottle, the wine has still retained amazing vibrancy and freshness and feels as if it has the ability to mature for many years more, should you be able to resist the temptation!
Pale lemon coloured wine. Floral nose with fruity notes of peach and grapefruit. Very good structure and minerality on the palate. Very long finish. Well suited to gourmet seafood like scallops, langoustines and other large shellfish.
