Mount Difficulty Pinot Noir
Tasted: Dec 2021
An earthy and malty nose, slightly ‘sauvage’ with earthy red berries, straw and subtle perfumed red fruit notes. Again the high level of alcohol is jolding it in check. Late gritty vanilla.
The palate is subtly oily and malty with earthy red fruit and juicy, slightly perfumed redcurrant/ cherry. Grippy tannin and spicy middle. Masked finish which remains gritty and woody. Oooh, that’s intense!
With water the nose is a still a bit on the tight side with the cask still fairly dominant. However there is a touch of estery white fruit and barley beneath. The palate is now pleasantly soft and juicy with red fruit, chocolate, malt and spice. Like the nose the cask is still very noticeable but its succulent, naturally sweet and ever so juicy. Long., with the estery white fruit emerging along with sultana, date, and redcurrant. In conclusion: Considering it’s fully matured in an ex-wine cask the distillery character is still, just about, there. Very impressive!
