Aged for 4 years in Oloroso Casks (40%), 1st fill Amarone (16%), 2nd fill Amarone (44%) followed by 1 year in ex-Paulliac casks.
Dist: 2017 Btl: 20203
Tasted: Dec 2024
Aromas of dusty, spicy redcurrant/ berry and hints of syrup, medicinal peat, earthy peat, green pepper, stewed apple, salt, menthol and camphor. With time it becomes quite smoky with a touch of dried fruit and raisin appearing.
The palate is quite herbal and mentholated. Green pepper, astringent peat, tar, stewed apple, camphor appears along with a little syrup coated red fruit and salt on the middle. Masked, dusty, cedar and cabernet fruti finish with a little volatile Musar-like fruit mingling with dry peat, menthol, burnt wood and green apple. A lovely, intense finish.
Water emphasises the cedar and cabinet notes on the nose. It also adds a sweetness to the peat and green pepper. Hints of gun flint and redcurrant jelly. On the palate it emphasises the Amarone dried f=red fruit as well as the cabernet black fruit. There’s still plenty of green pepper and more dry, dusty, crumbly peat. Long with a touch of sweet barley and lingering volatile fruit and syrup coated red fruit.
