Tasting Note
A blend of straight bourbons from Indiana, Tennessee and Kentucky, finished in three distinct expressions of virgin oak: Mizunara, French, and toasted American oak casks. Each component is finished separately then blended.
Tasted: Feb 2024
The nose is quite oaky, which is not a huge surprise. Coconut, white chocolate and sappy/ oily Mizunara notes are all present, along with a touch of burnt/ toasted wood. It’s not all oak as the spirit displays a lovely depth of macerated dark fruit, plum, apricot, grapefruit and gritty rye spice. Multi-layered with late apricot conserve and ginger.
The palate opens with sweet vanilla and intense, woody spices. Grippy, slightly tannic French oak mingles with the sappy Mizunara. Plump, sweet corn and spicy rye come through on the middle and make it feel a little more ‘trad’. Masked but spicy and gingery finish with lingering toasted, almost burnt caramel, spice and sweet tannins.
Diluted the nose is sweeter and shows more corn and less overt oak. The rye grains are a little ‘green’ and a touch of violets, pot pourri petals and pepper has emerged. The palate is less oaky and more ‘trad’. Sweeter corn and more toasted rye grains. Lovely astringent, herbal middle with fleshy, plummy fruit and dark chocolate. Lon with lingering spice, white pepper and pot pourri petals.
