Tasting Note
A blend of American whiskies finished in Black Strap Rum casks, Late Bottle Port pipes and Dunn Vineyards Cabernet Sauvignon casks.

The nose is rich, earthy and almost meaty with leather, walnut and dry biscuits. Those aromas are balanced by crème caramel, toffee and red fruit. A stunning combination of spirit and cask. With time the spices appear – ginger, salty minerals and subtle column still dried fruit. With more time the aromas become herbaceous. Wow!
The palate kicks off with dark chocolate coated red berries, malt, vanilla, big, juicy, ripe orchard fruit and molasses. It’s seriously rich and mouth-filling, but it’s superbly balanced by the saline minerality, alcohol and tongue tingling spices. Slightly masked but incredibly long and sweet with gritty rye spice/ tannin, hazelnut and returning dark chocolate and red fruit.
A drop of water brings out burnt wood, toasted oak and a little tropical fruit putty(!) lime and hazelnut. On the palate it is fuller and shows more molasses and dark chocolate. The red fruit is subtler and a little astringent now. Still long, still spicy and tannic on the finish.
