Tasting Note
Ex Pedro Ximinez, Bourbon and Virgin American oak.
Tasted: Oct 2017
A rich and slightly treacly nose with barley, dusty peat, oily peat, tar and plenty of brine. Quite woody, which isn’t a surprise given all the different cask types used but it’s still pretty well balanced with the American oak adding vanilla, the sherry, a slight herbal note and the treacle and the virgin oak, the taught tannins.
The palate opens with the sooty peat, rich fruit and vanilla. Soft spices move in along with the grippy oak tannins. Youthful but displaying a good depth and very briny middle. Long and vanilla’d with lingering soft spices, barley and light medicinal notes.
