A far more complex nose than the Fresh Bourbon bottling. Earthy peat mingles with subtle toffee, charred oak, straw and coffee. Good underlying starw-like barley and fleshy fruit. With time the peat becomes ashier and subtle astringent citric and herbal notes appear.

The palate is full and fairly oaky with toffee and vanilla. However, some earthy prat and youthful spirit pushes through. Masked, herbal peat and citrus finish with a subtle straw note.

Diluted the nose shows less peat and a little more barley and citrus. Still, plenty of oak character with the citrus notes giving it a pleasant freshness. The palate is also slightly less peated but still quite ashy and like the nose more citric and fresh. Still pleasantly oaked with a longer, juicier fruit finish and lingering smoke.

Description

The peated spirit is aged in a heavily charred ex-Woodford Reserve finishing cask which has had the staves cut into in order to expose the virgin wood beneath.
