Domaine Schoffit, NV Crémant d’Alsace, Extra Brut

Established in 1983 in Colmar, in the Haut-Rhin, Domaine Schoffit has developed a highly respected reputation for producing elegant and characterful classic varietal wines from some of Alsace’s most revered Grand Cru sites. Organically produced, their wines always show unmatched levels of finesse, poise and clarity, and this sumptuous Crémant is no different. From vines grown on alluvial soils around Colmar, the wine is made from a blend of 60% Auxerrois, 20% Pinot Blanc and 20% Pinot Gris.
Traditional-method secondary fermentation occurs in the bottle, followed by 33 months of ageing on the lees prior to disgorgement. The result is a fresh, lively, zesty and rounded sparkling wine with an elegantly fine mousse and flavours of orchard fruit, freshly baked bread and meadow flowers. Classically flavoured, full of character, finesse and not a little indulgence, this wine is a seasonal stunner.

Château du Coing, NV Perles Fines du Coing, Méthode Traditionelle

Named after its location at the “corner” where the Sèvre and Maine Rivers meet, the historic Château du Coing property, owned and run by Véronique Gunther, has, for generations, specialised in crafting beautifully refined wines that highlight the unique and distinctive relationship of the Melon de Bourgogne varietal in conjunction with the local maritime Atlantic climate and metamorphic rock soils on which it’s grown.

Made from 100% Melon de Bourgogne, this Traditional Method sparkling wine undergoes secondary fermentation in the bottle, with 18 months spent ageing on the lees before being disgorged. Showing all the exceptional finesse of sparkling Loire Melon de Bourgogne, the Perles Fines excels with delicate notes of citrus, white stone fruit and hints of warm brioche, all enveloped in a stream of elegantly fine bubbles that carry through to a refreshingly pure finish with just a whisper of salinity. A suitably refined and elegant aperitif for any occasion, but especially good if you’re a bit partial to the odd festive oyster or 10!

Elusìa Estate, NV Organic Prosecco, DOC Treviso

Tucked away in the rolling foothills of Treviso in the Lison-Pramaggiore area of the Veneto, in north-eastern Italy, the Elusìa Estate has, for many decades, been redefining the possibilities and perceptions of quality-focused, expressive and refined Prosecco. Through organic farming, limited use of sulphur in the winery, and a desire to allow the local Glera grape varietal to transparently reflect the local terroir of mineral-rich, silty clay soils, the Elusìa Estate has consistently succeeded in producing wines that are soft, purely fruited and deliciously moreish, in true Prosecco style, but aligned to a wonderful freshness, purity and elegant definition.
As is the tradition in the region, the wine is made using the Charmat Method of first and secondary fermentation in stainless steel tanks at low temperature to preserve the natural freshness of the Glera grape’s fruit. The finished wine has a lovely exuberant and persistent effervescence, giving a creamy texture, with flavours of white peach, ripe pear, and honeydew melon, balanced out by vibrant acidity and a fresh lingering finish. This is a Prosecco of rare refinement and a perfect guest at any festive party – bright, approachable and stylish to boot!
