What we’re proposing might not be quite as bracing or invigorating as hastily casting one’s clothes aside and making a mad dash for a secluded lake, or the foaming, fresh waves of the British coastline, but not far off.

If it’s freshness and exuberance you’re in search of, with a little fun and excitement thrown in for good measure, then look no further than these two delightfully sparkling and effusively fruited Pét-Nat wines from Azienda Fabrizio Dionisio and Domaine Vincendeau.

Crafted using a method that perhaps most closely resembles how the very first sparkling wines were originally produced, Pét-Nat wines are bottled mid-fermentation, before all the residual sugars have been fermented into alcohol, allowing the process to finish in the bottle. With nowhere to go, the bubbles produced from this process are absorbed into the wine, whilst the dead yeast cells, the lees, float down to the base of the bottle, remaining in contact with the wine, in most cases, until it is opened and served. The result is a fresh and vibrant wine with soft bubbles – often lightly cloudy, always characterful, and increasingly sought by Sommeliers and wine enthusiasts alike.

With their expressive and bright primary fruit flavours, gentle spritz and lees-aged subtle, savoury and saline complexity, these wines are the perfect way to celebrate the warm months ahead. Think less mad-cap, impromptu skinny dipping and more elegantly effervescent Spring and Summertime sipping!

2022 Azienda Fabrizio Dionisio IGT Toscana Rosato ‘Bolla Galeotta’ Syrah

Amidst the rolling hills of Cortona, Tuscany, Fabrizio Dionisio has built a reputation for championing both Syrah and Viognier with a deeply artisanal, terroir-driven philosophy that is reminiscent of the great wines of the northern Rhône in France.

Rooted in respect for nature and minimal intervention, his wines reflect both tradition and innovation – none more so than the Bolla Galeotta, a playful, yet precise expression of sparkling Syrah.

From clay, limestone and schistous vineyards around the village of Castagno, the Syrah grapes are harvested earlier than any other of the domaine’s cuvées to ensure good acidity and freshness. The wine is fermented in stainless steel and bottled with sufficient residual sugar to continue the fermentation in the bottle. In typical méthode ancestrale style, it is neither filtered, nor disgorged and remains on the lees right up to the point that it is poured.

The result is a lightly hazy, deep-pink gently sparkling Syrah that is medium-bodied, textured and fresh with aromas and flavours of apples, pink guava, sourdough and citrus zest. This Pét-Nat rosato Syrah captures both the authentic taste of modern Tuscany with the beautiful spontaneity and charm of natural fermentation.

2022 Domaine Vincendeau VDF ‘Pét-Nat de Liv’ Zero Brut

A rising star of the Loire Valley and Natural wine movement, Liv Vinceandeau founded her domaine in 2014 after a journey from Germany to Anjou via studies in Chemistry and viticulture.

Working organically from the outset and biodynamically since 2019, she has quickly gained recognition for her precise and expressive wines rooted in Chenin Blanc.

Sourced from 60-year-old vines grown on the volcanic, schistous soils of Rochefort-sur-Loire, just south-east of Savennières, this blend of 95% Chenin Blanc and 5% Grolleau Noir – fermented as a blanc de noir – undergoes spontaneous fermentation in stainless steel before being bottled midway through the process following a light filtration. It is non-disgorged and remains in contact with the fine lees.

This is a beautifully vibrant white Pét-Nat with a soft, rounded texture, zesty acidity and delicate, but persistent effervescence. Expect crisp notes of quince, lemon and apple, layered with subtle minerality and a refreshing, dry finish. A true gem of a wine, the Pét-Nat de Liv delivers depth, finesse, lively refreshment and unmistakably natural energy.
