The nose is malty and savoury with sage, seaweed, bog myrtle, earthy peat, violets and a touch of creamy oak. The oak becomes wonderfully sawdusty with time and hints of vibrant lemon, peat smoke, salt and toffee appear. Given more time, oily almond and onion skin. Fabulously complex.
The palate is quite citric to begin, plenty of fresh lemon and lemon balm. Hints of oysters, seaweed, creamy oak, marzipan, mature barley, violets, toffee and peat dust. Very salty middle with a touch of iodine and underlying malt and oak. Long, very salty, mineral, sea spay finish with herbal peat, dry peat, juicy dried apricot, marzipan and more lemon! Wow! Great finish. Amazing vibrancy with sawdust and peat dust after-taste.
