Pungent aromas of juniper, bitter spice, salt, coriander and a touch of vanilla. Quite fresh and coastal with a late earthiness.
The palate opens with the bitter spice, liquorice, salt and some almost fishy notes. A touch of vanilla sort of balances. Subtle juniper, sea buckthorn, coriander and citrus on the middle. Long, slightly tart but sweet cherry? and vanilla finish. Peppery after-taste. I’m guessing it’s the squid ink that adds the salty, fishy notes and colours it slightly black.
