The nose is rich, woody and pretty peaty with sweet oxidised fruit, honey, menthol, medicinal peat, iodine, coffee and earthy peat. Wonderfully gritty but the barley and honey underpins and balances. With time it becomes sweeter and winey but it’s still pretty herbal and medicinal.
The palate is full, rich and honeyed with oxidised sweet fruit and building gritty tannins, earthy peat, medicinal peat and alcohol! Subtle coffee, tar and salt on the middle with the earthy peat coming through strongly. Long and salty with sweet orange/ apricot conserve and lingering bitter, peppery spice.
With water the nose is oilier with more emphasis on the sauternes cask. Quite fishy and fresh with lemon, barley and manurey peat. The palate displays more of the wine character with honey, straw and dried apricot. Gently smoked now with subtler medicinal notes and a touch more herbal coffee and rose petal marc spirit. Long and coffee’d with lingering, sweet, heathery peat.
