Virgin oak casks, ex-Bourbon casks and ex-Canadian Whisky casks

The nose is dense and quite oaky with plenty of charred wood notes. It’s balanced by the crisp graininess of the spirit and hints of dried fruit, citrus and vanilla. With time a subtle corn-like sweetness develops along with some milky coffee notes.
The palate opens with the toasted oak and soft column still dried fruit. Hints of malt, chocolaty tannins and wood spice on the middle. For a 40% spirit the intensity builds well, although you have to think that it would have been even more intense at 46%. Good length with slightly grippy virgin oak, vanilla and dried fruit in the finish.
